Day 7: 25 Days of Christmas

Strawberry Santas

Whether for a holiday party, or simply a late night snack, these cheesecake-filled strawberry treats will not disappoint! (Trust me. I’ve made them for my girlfriend’s family… let’s just say they warmed up to me pretty quickly.) And the best part is that it only takes 10-15 minutes to make! SO EASY!

 

Here’s how you do it.

 

First,

you want to buy your supplies. You’ll need a big pack of Strawberries, 4 oz. of Cream Cheese, 4 Tbs. of Confectionery Sugar, 1 Tsp. of Vanilla Extract, and some dipping chocolate.

Second,

you’ll need to mix the Cream Cheese, Sugar, and Vanilla into a bowl until you get a lightly whipped texture. (Those are the technical terms because I’m baker/cheesecake expertise…obviously.) Once you’ve finished mixing, grab a large sandwich bag and spoon the filling in. You’ll use the sandwich bag to “pipe” the cheesecake filling into the strawberries. (If you want to be a little more fancy, you can get yourself an icing bag. I got one from Michael’s but I didn’t feel like washing it after I was done, so disposable sandwich bags it was. Don’t judge me.)

Third,

it’s time to wash your Strawberries! When their all clean and beautiful, you’ll need to cut the stem/leaf parts off. I bought some pre-cut, so that’s an option too! When the white innards of the strawberry are exposed, take a sharp knife and cut out the strawberry meat. (You can cut the strawberries any way you’d like. I’ve done it two ways: one 1/3 of the way down on the strawberry and the other I simply hollowed out the entire strawberry. You can see what I mean in the pictures below.)

Fourth,

fill your strawberries & decorate with CHOCOLATE.

Now you get to eat every single one!!! One of these batches of Cheesecake filling can fill around 30-40 Strawberries. What I usually do is stuff enough strawberries for everyone and keep the extra in a small container to dip other fruit in for the future. But honestly, the best part of making these is getting to share them with others! I’ve brought some to school with me, to hangouts  with friends…you name it! Food has a tendency of making people happy…so go and make some now!!!

P.S. – I can’t believe there are only 18 days until Christmas. It’s blowing my mind.
